Delicious Indian-Style Tandoori Chicken Recipe

Indian cuisine is renowned for its flavorful Tandoori chicken, which features a unique spice blend in the marinade. While traditionally cooked in a tandoor oven, this dish can easily be prepared on an electric grill, a regular grill, or in a conventional oven. Here’s how to recreate this classic Indian dish at home.

Ingredients

For the Chicken:

  • 1 kg chicken (thighs, breasts, or quartered pieces)
  • 2 tbsp lemon juice
  • 1/2 tsp salt
  • 1/2 tsp black pepper

For the Marinade:

  • 1 cup yogurt
  • 2 tbsp tomato paste
  • 2 tbsp vegetable oil
  • 1 tbsp fresh ginger, minced
  • 2 garlic cloves, minced
  • 1 tsp turmeric
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika (sweet pepper)
  • 1/2 tsp chili powder (optional)
  • 1 tsp garam masala (Indian spice mix)
  • 1/2 tsp salt (to taste)
  • A few drops of red food coloring (optional, for the traditional tandoori red color)

Preparation

Preparing the Chicken:

  1. Rinse the chicken pieces thoroughly and pat them dry.
  2. In a small bowl, mix the lemon juice, salt, and black pepper.
  3. Rub the chicken with this mixture and let it rest for 30 minutes.

Preparing the Marinade:

  1. In a large bowl, combine the yogurt, tomato paste, oil, ginger, garlic, turmeric, cumin, coriander, paprika, chili powder, garam masala, and salt.
  2. For the classic red color, add a few drops of red food coloring and mix well.

Marinating the Chicken:

  1. Add the chicken pieces to the marinade and toss to coat them thoroughly.
  2. Cover the bowl and refrigerate for 4-6 hours, or preferably overnight, for better flavor.

Cooking:

  1. Preheat the oven to 200°C (392°F).
  2. Place the marinated chicken pieces on a baking tray lined with parchment paper or lightly oiled.
  3. Bake the chicken for 30-40 minutes, flipping halfway through to ensure even cooking.
  4. For a charred finish, broil the chicken for an additional 3-5 minutes.

Serving:

  • Serve the Tandoori chicken with Indian naan bread, basmati rice, or a green salad.
  • Garnish with lemon slices and chopped coriander for an added touch of flavor.
